PUFFED PASTRY TART WITH GRILLED VEGGIES


Today’s recipe can be used for a meeting with friends, family dinner or lunch. It’s a perfect combination of puffed pastry with grilled veggies and green pesto. Our favorite food for sisters’ meeting. It’s hard to resist it. Watch out for your piece;)  It really disappears quickly.




Ingredients (serves 3-4):

2 sheets puff pastry
1 bell pepper
1 zucchini
1 onion
6 cherry tomatoes
hot chili pepper (optional)
2 tbsp olive oil
salt
black pepper


Instructions:

Cut the bell pepper into cubes. Peel and cut the zucchini into half slices. Cut the onion into quarters. Put all the veggies, cherry tomatoes and chopped chili pepper (optional) into a mixing bowl. Sprinkle with olive oil, season with salt and pepper. Mix well. Preheat the oven to 200 degrees C (grill mode - if available). Place the veggies on a baking pan covered with baking sheet and grill for about 20 minutes.


Press the pastry into a tart pan. Trim any excess pastry. Put grilled veggies on the first layer of pastry.


Cover the veggies with the second sheet of puff pastry and prick the top of the pastry with a fork. Preheat the oven to 200 degrees C and bake the tart for about 30 minutes.


Serve with favorite salad.
