PIZZA WITH GRILLED VEGGIES AND BASIL AND ROCKET PESTO

Today something for pizza fans - amazing pizza with grilled veggies and basil and rocket pesto. We can assure you that no slice of pizza will be left. But be careful! This is not light food - it’s more for body building ;p So just in case you’d better visit a gym or go for a long walk before.


Ingredients (1 large pizza):
Pizza dough:
15 dag  fresh yeast
about 190 ml warm water
420 g flour
1 teaspoon sugar

Pesto:
handful of basil
handful of rocket
2 tablespoons cashew nuts
2 tablespoon shelled pistachios
1 tablespoon roasted almond flakes (optional)
12 tablespoons olive oil
salt and pepper
Topping:
2 bell peppers (cut into small pieces)
1/2 zucchini (cut into slices)
1 onion
salt and pepper
2 tablespoons olive oil
25 dag grated vegan mozzarella
tomato sauce (see recipe for vegetarian pizza)


Put pepper and zucchini (cut) into the bowl and toss with the tablespoon of olive oil, salt and pepper. Then, put the vegetables on the baking sheet. Preheat the oven to 200 degrees C (grill mode) and grill until golden - 10-15 min.

Meanwhile, prepare pizza dough. Sprinkle the yeast into a bowl and dissolve it warm water with sugar. Mix and leave to froth.


Prepare pesto. Blend until the nuts turn into a shiny, smooth paste. Put rocket leaves and basil to a food processor. Add nuts, olive oil and salt and pepper. Blend to a smooth paste. If the mixture is too thick add more olive oil and blend again.


Sift the measured flour into a mixing bowl. Add leaven, olive oil and a pinch of salt.  Knead the dough until it’s smooth and firm, and is no longer sticky. Shape dough into a ball and cover it with a kitchen towel (10-15 minutes).




Stretch pizza dough with your fingers on an oiled baking tray or baking sheet. Spread tomato sauce on top, sprinkle with mozzarella, onion and cover with grilled vegetables. Sprinkle the entire pizza with pesto.


Preheat the oven on convention mode at 220 degrees C (250 degrees C - pizza mode, if available). Put pizza in the oven for 10-12 minutes.
