All pizza fans, let’s celebrate:) Here’s the recipe for homemade vegan pizza with plant based protein, carrot and green pesto :) But before you start kneading the dough, please remember about doing some sports. This pizza is so good that we may assure you that not even one slice of it will be left!
Ingredients (for 2 large pizzas)
Basic dough:
20g fresh yeast
1 tsp sugar
250ml warm water
500g wheat flour type “0”
2 tbsp olive oil
1 tsp salt
Pizza topping:
1 red bell pepper
1 carrot
12 cherry tomatoes
1 onion
6 tbsp canned chickpea/ cooked chickpea
4 tbsp canned/fresh corn
1/2 chili pepper
Sauce:
1/2 tin of chopped tomatoes
1 tsp sugar
fresh basil
oregano
1 tbsp olive oil
pinch of dried garlic
Instructions:
Sprinkle the yeast into a bowl and dissolve it warm water with sugar. Mix and leave to froth. Sift the measured flour into a mixing bowl. Add leaven, olive oil and a pinch of salt. Knead the dough until it’s smooth and firm, and is no longer sticky. Shape dough into a ball and cover it with a kitchen towel (10-15 minutes).
Peel the carrot and shave it into ribbons, using a vegetable peeler. Cut the bell pepper into squares, tomatoes into halves and chop the onion. Chop chili pepper finely.
Meanwhile, prepare the sauce. Put tomatoes into a pot. Add salt and sugar and stew under a lid on a medium heat for about 5 minutes. Add chopped basil, oregano and garlic and cook for another 3 minutes.
Stretch pizza dough with your fingers on an oiled baking tray or baking sheet. Spread tomato sauce on top. On top put the veggies, chickpea and corn. Sprinkle each pizza with some pesto.
Preheat the oven to 250 degrees. Put pizzas in the oven for 9-12 minutes. If you bake your pizza on a stone 9 minutes is enough.
