MIXED PEPPER SALAD

The pepper season is almost over so we’re taking the most of it especially since the pepper’s price is quite reasonable nowadays.
Here’s the recipe for a simple salad. It goes perfectly with the main course or light lunch. Please note: pepper provides more vitamin C than lemon!;)

Ingredients (serves 2):

1/3 red bell pepper
1/3 green bell pepper
1/3 yellow bell pepper
1/3 orange bell pepper
1 red onion

Dressing:

4 tbsp olive oil
1 tsp rice vinegar
1 tbsp agave syrup
salt
black pepper



Instructions:

Cut the bell peppers into thin slices. Peel and cut the onion into thin slices. Combine all the ingredients for the dressing. Put the peppers and onion on a plate. 


Pour the dressing over the salad. Cool in the fridge for at least 30 min. before serving. Enjoy!
