We love light and nutritious meals. Such meals not only give us energy for daily activities but also cause we don’t feel like having a nap in the middle of the day ;) And tofu is a perfect solution for that. It absorbs any flavor you want and is a good source of plant based protein. Here’s the recipe for plant based balls rich in protein.
Ingredients (10-12 balls):
2.5 cups vegetable stock
100g rice
2 tbsp nutritional yeast
2 tbsp ground flaxseed meal
salt
black pepper
Stuffing:
handful of basil
4 tbsp frozen peas
90 g natural tofu
Additionally:
2 tbsp spelt flour
Instructions:
Cook the rice in vegetable stock. When the rice is cooked, drain it. Combine rice with nutritional yeast, flaxseed meal and season it with some salt and pepper. Mix well. Blend basil with tofu and season with some salt and pepper. Add frozen peas to tofu and mix.
Shape small sized balls out of the rice mixture. Press some tofu and peas mixture inside each ball. Coat each ball in the flour.
Preheat the oven to 180 degrees C. Bake rice balls for about 40 minutes (for the last 10 minutes put the grill mode on so that the rice balls are crispy). You can also fry the rice balls in vegetable oil and then transfer them to paper towels to drain any excess oil.
Serve with salad and fresh veggies. Enjoy!
