EGGPLANT IN SESAME OIL

Maybe it’s hard to believe, but we haven’t been the fans of eggplant so far. It has not inspired us much until one visit At a local restaurant serving foods from the Middle East. This is how our recipe for eggplant in sesame oil came into being.



Ingredients (serves 1):

1 medium-size eggplant
1/3 tsp soy sauce
5 tbsp sesame oil
5 tbsp canola oil
2 ginger slices
salt
black pepper
a piece of chili pepper
1 tbsp tahini
2 tbsp peanuts
some water
sesame seeds
chives



Instructions:

Cut the eggplant into the slices about 2 cm thick. Season each slice with some salt and leave for about 1 hour.


Grate ginger. Combine ginger with soy sauce, sesame oil, chopped chili pepper and mix well. Press the eggplant between clean kitchen towels to remove the water and then cut it into cubes. Pour the sesame oil mixture onto the heated pan and add the eggplant. Mix well. 

Fry while stirring continuously. Add canola oil, mix and continue frying. Season with salt and pepper. At the end add tahini, peanuts, mix and fry until the eggplant has softened but not collapsed. Add some water. 

Serve with sesame seeds and chopped chives on top. Enjoy!
