We used to have pancakes once a week when we were kids. And finally we succeeded in making their plant based version. Here’s the recipe for pancakes with tofu and millet cottage cheese. Delicious, nutritious and rich in plant based protein.
Ingredients:
2 tbps pumpkin puree
1 cup wheat flour
350 ml plant-based milk
2 tbsp orange juice
a few drops of vanilla extract
16 g vanilla sugar
2 tsp baking powder
2 tbsp sugar
2 tbsp vegetable oil
pinch of salt
Tofu “cottage cheese”:
90 g natural tofu
50 g dried millet
2 tbsp soy milk (vanilla)
2 tbsp sugar
Instructions:
Rinse the millet and put it into the boiling water. Cover and cook over low heat for about 15 minutes. Leave the millet to cool and then blend it with tofu. Add milk and sugar and blend again.
Put the pumpkin mixture into a large mixing bowl. Add vanilla extract, vanilla sugar, sugar and orange juice. Mix well. Add a pinch of salt, milk, vegetable oil and mix. Add sifted flour and baking powder. Mix well.
Heat the oil in a frying pan and fry the pancakes on both sides. Serve with tofu cottage cheese. Enjoy!
