MILLET AND CHICKPEA BALLS

Have you ever heard people saying that it’s impossible to provide sufficient amount of plant based protein in food? Well, we’re going to prove them wrong;) Here’s the recipe with lot’s of protein coming from plants. And please note that it’s also gluten free. Try it, have it and enjoy vegan food.

 

 



Ingredients (12-14 balls):

100g dry millet
about 240 g canned chickpea
1 spring onion
fresh parsley
2 tbsp ground flaxseed + 4 tbsp hot water
1 tsp dried garlic
3 tbsp tomato puree
2 tsp Herbes de Provence
corn flakes to coat each ball



Instructions:

Preheat the oven to 200 degrees C. Rinse the millet and put it into the boiling water. Cover and cook over low heat for about 15-20 minutes. 
Leave the millet to cool and then blend it with chickpea. Chop the onion and parsley finely. In a small bowl, add the flaxseed meal and water. Add the flaxseed mixture to the balls mixture. Add the onion, parsley, garlic and spices. Add tomato puree and mix well. 
Wit wet hands, shape small balls out of the mixture. Roll each ball in crumbled corn flakes. Lay the balls on a baking pan covered with baking sheet. 
Bake for about 30 minutes. After 30 minutes, turn on the grill mode and bake for another 15-20 minutes. You can also fry the balls in vegetable oil. Serve with tomato sauce and a salad. Enjoy!
