CARROT OMELET WITH SESAME OIL


Perfect nutritious, high protein breakfast for the beginning of the day! Here’s the recipe for plant based omelet with a little bit of oriental flavor. Combination of carrot and chickpea in one - perfect post or pre workout meal. So work out and then rich out for this nutritious breakfast.




Ingredients (serves 1):

6 tbsp chickpea flour
2 tbsp ground flaxseed meal
1 tbsp yeast flakes
2 tsp gluten free baking powder
pinch of baking soda
½ cup water
salt
black pepper
1 carrot peeled and grated on the small holes of a box grater or a food processor's grating attachment
fresh parsley
1/2 fresh chili pepper (optional)
2 tsp curry powder
2 tbsp sesame oil
1 tbsp of vegetable oil




Instructions:

Combine all dry ingredients in a bowl (flour, flaxseed meal, yeast flakes, baking powder, soda and spices). Slowly add water and mix well.

Chop the parsley and chili pepper finely and add it to batter. Mix well.

Add grated carrot, sesame oil and mix again.

Add some oil on a frying pan and heat it. Pour the batter on the pan.

Fry for about 3-4 minutes on medium heat. Then cover the pan and fry for about 2 minutes. Take off the lid and gently flip the omelet to the other side.

Fry for a while until the omelet turns golden brown. Put the omelet on a plate and sprinkle it with some sesame oil. Serve with fresh veggies. Enjoy!
