BEET SOUP


Delicate soup that is made of veggies that are in season and is really easy to make. One of our favorite summer soups - beet soup. The flavor of beet combined with lots of vitamins. You can have it without feeling guilty - it’s totally fit;)



Ingredients (serves 3-4):

1l -1.5l vegetable stock
2 carrots
bunch of fresh beet roots and their greens
4 potatoes
1/2 tsp sugar
1-2 tbsp lemon juice
salt
black pepper


Additionally:

dill



Instructions:

Peel the carrots and potatoes. Dice the potatoes, cut the carrot into half-slices. Wash the beet roots and their greens and chop finely. Add the beet roots and their greens to the boiling vegetable stock and cook over low heat for about 10 minutes. Then add the veggies, sugar, lemon juice and spices. Cook over low heat for about 15-20 minutes (until the veggies are soft). Serve with fresh chopped dill. Enjoy!
