When the younger sister cries over giving up gluten, the older sister viciously bakes baguettes;) Yes, here’s the recipe for homemade wheat and rye baguettes that make any breakfast a real celebration almost like in Paris cafe ;)
Ingredients (4 baguettes):
400g wheat baking flour
250g rye baking flour
50g fresh yeast
1 cup warm plant based milk
100 ml water
3 tbsp olive oil
1-1.5 tsp salt
2 tsp sugar
Instructions:
Crumble the yeast in a bowl. Add sugar and cover with warm milk. Mix well and leave for a few minutes. Add sifted flours, salt, water and start kneading the dough. At the end, add the olive oil.
Smear the dough with olive oil, cover and leave in a warm place for about 40 minutes. Preheat the oven and the baking stone to 250 degrees C. Divide the dough into 4 equal parts. Shape baguettes out of the dough. Cover and leave for another 20 minutes, to rise. Then score the top of each baguette. Put into the oven.
Bake for about 20 minutes (on the baking stone). The baking time may be longer without the baking stone. The baguettes should be crispy from the outside.
Leave on a wire rack to cool. Serve hot or cold. Enjoy!
