People who are on a plant based diet love veggies. That seems obvious. But cauliflower used to be a nightmare to some of us when we were kids. Here’s the recipe for spinach salad with cauliflower that is served in a totally different way than we know from our childhood. Light salad with homemade dressing and strawberries. Plant power!
Ingredients (serves 1):
handful of spinach
5-6 strawberries
100 g cauliflower
1 carrot
1 tbsp almond flakes
1 tbsp olive oil
1 tsp sweet pepper
1/2 tsp chili pepper
salt
black pepper
Dressing:
2 tbsp olive oil
1 tbsp maple syrup
2 tbsp lemon juice
salt
black pepper
Instructions:
Wash cauliflower and divide it into small florets. Preheat the oven to 200 degrees C.
In a small bowl combine olive oil with sweet pepper, chili pepper, salt and black pepper. Put cauliflower florets into a bowl and mix well. Put the cauliflower florets on a baking pan covered with baking sheet. Roast for about 15 minutes. Put spinach on a plate. Cut strawberries into halves and put them on the spinach. Peel the carrot. Slice the carrot into the ribbons using the vegetable peeler. Put the carrot ribbons on a spinach.
Prepare the dressing: combine all the ingredients for the dressing. Put roasted cauliflower on top of the salad. Pour the dressing over the salad. Sprinkle the salad with some almond flakes. Enjoy!
