Occasionally, we keep reminding you Of our slogan: Tofu is not bad! We hope that we have already convinced you that tofu is a perfect source of plant based protein and when seasoned well it is delicious.Here’s the recipe for savory lazy dumplings. Combination of tofu, millet and parsley.
Ingredients (about 26 dumplings):
50g dried millet
90 g natural tofu
1/4 cup wheat flour
1/4 cup potato flour
2 tsp powdered parsley leaves
dried garlic (to taste)
1 tsp nutritional yeast flakes
salt
black pepper
Tomato sauce:
1 tbsp olive oil
1 tsp Herbes de Provence
1 tsp dried garlic
1 tsp sugar
1/2 cup tomato puree
salt
Instructions:
Cook the millet and leave to cool.
Prepare the sauce. Heat olive oil in the pan. Add the spices and fry for 1 minute while tossing. Add tomato puree and mix. Add sugar and season with some salt. Cover and cook over low heat for about 5 minutes.
In a mixing bowl, combine tofu with millet. Blend it. Add spices, powdered parsley, nutritional yeast and flours and knead the dough. If necessary, add some more wheat flour. Turn the dough out onto a floured board. Divide the dough into a few pieces and roll each piece of the dough (about 2 cm wide). Flatten each roll of the dough and cut it into diamond shapes with a knife. Fill the cooking pot with water (adding some salt), cover with a lid and bring it up to boil. Put the dumplings into the boiling water and cook until they float to the top.
Serve the dumplings with tomato sauce. You can also sprinkle some vegan parmesan on top. Enjoy!
