We love tofu and what we can make out of it. We love colorful nutritious plant based foods that provide us with the energy for the entire day. And since tofu is not bad, here’s the recipe for scrambled tofu served in chicory boats. colorful, delicious and very nutritious.
Ingredients (serves 1-2):
chicory
90 g natural tofu
fresh parsley
chives
1/2 chili pepper
salt
black pepper
1 tsp curry powder
4 cherry tomatoes
1/3 red bell pepper
broccoli sprouts
vegetable oil
Instructions:
Wash the chicory and separate the leaves. Chop chili pepper, red pepper, chives and parsley finely.
Heat the olive oil in a pan. Add chili and bell pepper and fry for a while. Add crumbled tofu and mix well. Add curry powder. Season with some salt and pepper. Mix and fry for about 2-3 minutes while tossing. At the end add chopped chives and parsley.
Fill chicory leaves with scrambled tofu. Put some broccoli sprouts on top of each leaf. Put tomatoes (cut in half) and slices of bell pepper on top of it. Enjoy!
