CHICKPEA ENERGY BARS


Lots of energy is something sweet! Pre or post workout, high in plant based protein, chocolate chickpea energy bars! Something that the participants of our latest event had the chance to try and loved it! A recipe that is dedicated to everybody who attended our event and people who look for something better than sweets from the market.



Ingredients (20-22 bars):

240 g canned or cooked chickpea
10 tbsp peanut butter
1 cup rolled oats
1 tsp baking soda
1/2 cup sunflower seeds
1 cup dates
½ cup coconut shreds
4 tbsp cacao powder
5 tbsp maple syrup (optional)
6 tbsp coconut oil (melted)



Instructions:

Blend chickpea well. Add sunflower seeds, dates and blend again. Add coconut shreds, peanut butter, cacao powder and rolled oats and blend. Then add baking soda, coconut oil and maple syrup (optional). Mix well. 

Preheat the oven to 190 degrees C. Put the dough into a baking pan covered with baking sheet. Spread the dough evenly. Press the dough with your hands until it forms a thick square. 

Bake for about 25-30 minutes. 

Leave on a wire rack to cool. Cut the dough into bars. You can store the bars in the fridge for a few days. Enjoy!
