Some people feel sorry for us thinking that on a plant based diet we suffer and cannot eat most delicious things. But they cannot be more wrong! Even though we only eat plants, we can make almost anything from them. Here’s the recipe for a dessert that reminds us of our early childhood - sweet braided bread with crumble!
Ingredients (2 braided breads):
25 dag fresh yeast
6 tbsp coconut (brown) sugar
1 cups soy milk (vanilla or other plant based milk)
2,5 cups wheat flour
pinch of salt
grated rind of 1 orange
16 g vanilla sugar
3 tbsp vegetable oil
Crumble topping:
2 tbsp coconut oil
50 g wheat flour
2 tbsp coconut (brown) sugar
Instructions:
Heat the milk. In a large mixing bowl dissolve the yeast and sugar in warm milk. Mix well and leave for a few minutes. Then add sifted flour, salt, grated rind of orange and vanilla sugar and start kneading the dough. After a few minutes, add the oil. Then cover the dough and leave for about 1 hour to rise (or until it doubles its size). Prepare the crumble topping: combine all the ingredients for the topping.
Preheat the oven to 200 degrees C.
Divide the dough into 2 even parts. Then divide each part into 3 even pieces. Roll each piece into a long rope. Braid the ropes together just like with the plait of hair. You will get 2 braided breads from the ingredients we listed. Put the breads on a baking pan covered with a baking sheet. Cover and leave for another 30 minutes. Then brush each bun with some milk and put the crumble on top.
Bake for about 25 minutes. Leave on a wire rack to cool. Enjoy!
