Summer is getting close and we can feel it. That’s why we are looking for some delicate meals that are not only light and refreshing, but also nutritious. And what’s better than salads? Perfect lunch for work. Here’s the recipe for salad with caramelized juicy pear, tofu and walnuts. Perfect and delicious combination:)
Ingredients (serves 1):
1 handful baby spinach
1 pear
1-2 tbsp walnuts
90g natural tofu
2 tbsp chickpea flour
1 tbsp sesame seeds
2 tsp sugar
salt
black pepper
1/2 tsp mustard
1/2 tsp agave syrup
2 tbsp olive oil
1 tbsp lemon juice
Instructions:
Cut tofu into cubes. Season with some salt and pepper and mix everything. Put the flour and sesame seeds into a bowl and mix everything. Combine tofu with flour and sesame seeds mix.
Place spinach on a plate. Peel and cut the pears into 8 wedges. Heat the olive oil in a pan and add 2 teaspoons of sugar. When the sugars starts to get brown, add the pear and fry for a while, until the pears wedges turn golden, stirring from time to time. Put the pear wedges on a spinach.
Heat 1-2 tbsp of olive oil in a pan and fry the tofu cubes until golden brown. Transfer to paper towels to drain any excess oil. Put the cubes on a salad.
Prepare the sauce: combine all the sauce’s ingredients. Pour the sauce on top of a salad. Sprinkle the salad with roasted walnuts. Enjoy!
