QUINOA AND CHICKPEA BALLS IN PISTACHIOS


Well balanced, plant based meal is what we like preparing. The flavor and the nutritional balance is the best combination when the food is concerned. Here’s the recipe for plant based quinoa balls full of flavor and protein. Perfect for lunch or dinner.



Ingredients (10-12 balls):

100 g dried quinoa
280g canned (cooked) chickpea
1/2 chili pepper
2 spring onions
clove of garlic
1 tbsp peanut butter
1 tbsp tahini (optional)
3 tbsp breadcrumbs
salt
black pepper
ground pistachios/ corn flakes to coat the balls




Instructions:


Rinse the quinoa and put it to the boiling, salted water. Cover and cook over low heat for about 20-25 minutes. Drain off the excess water at the end. 

Put cooked quinoa and chickpea to the mixing bowl and blend well. Chop the onion, garlic and chili pepper finely and add to the rest of the ingredients. Add peanut butter, tahini and breadcrumbs. Season with some salt and pepper. Mix well. 

From the mixture shape small balls the size of a walnut. Coat each ball in ground pistachios or crumbled cornflakes. 

Fry the balls in oil or bake in the oven (190 degrees C). If baked, after 20 minutes roll the balls to the other side and set the temp. to 200 degrees C (grill mode), to make them crispy from the outside. Serve with favorite sauce and salad. Enjoy!
