PEAR AND ALMOND TART

The long May weekend barely ended and another weekend has just begun;) So it’s time for some plant based dessert. Crispy crust and pears full of flavor and aroma. It’s baking time!

Ingredients:

Dough:

250 g wheat flour
200 ml vegetable oil
4 tablespoons icing sugar
a few tbsp cold water
vanilla extract
pinch of salt

Filling:

500 g pears
4 tbsp water
seeds out of 1 vanilla pod
2 tsp cinnamon
a few drops of rum/ rum extract
almond flakes

Instructions:

Knead the dough out of the crust ingredients. Leave in the fridge for about 20 minutes. Peel and slice the pears.

Put sliced pears into the hot pot and cover them with water. Cook over low heat for a few minutes, while stirring constantly. Add rum/ rum extract, cinnamon and vanilla. Mix well. When the pears get softer turn of the heat.

Take about 1/4 of the dough and put is aside. With your fingers, press the dough into a tart pan. Put the sliced pears on the dough.

Grate the remaining part of the dough on the large holes of a box grater or using a food processor's grating attachment. Sprinkle the top of the tart with almond flakes. Preheat the oven to 180 degrees C. Bake the tart for about 50-60 minutes. Enjoy!
