Millet! It is perfect for sweet and savory meals. That’s why we use it so often in our kitchen. Here’s the recipe for savory dish that is really easy to make. Millet pancakes with veggies and green pesto. Perfect match.
Ingredients (serves 2-3):
8 tbsp cooked millet
200 g zucchini
120 g carrot
3 tbsp ground flaxseed meal
chives
salt
black pepper
1 tsp curry powder
2 tbsp spelt flour
2 tbsp potato flour
Pesto:
handful of basil
handful of rocket
2 tbsp cashew nuts
2 tbsp shelled pistachios
1 tbsp roasted almond flakes (optional)
12 tbsp olive oil
Salt and pepper
Instructions:
Peel the carrots and zucchini and grate them on the small holes of a box grater or using a food processor's grating attachment. In a large bowl, combine the millet with grated veggies. Add flaxseed meal, chopped chives, curry and season with some salt and pepper. Mix well.
Add the flours and mix again. Shape small pancakes out of the mixture and fry in the vegetable oil, until golden brown on both sides. Transfer to paper towels to drain any excess oil.
Blend all pesto ingredients well. Serve the pancakes with pesto and favorite salad. Enjoy!
