GREEN TAGLIATELLE WITH TOMATO PESTO


Sundried tomatoes and Italian food is like the perfect combination. That’s why we love homemade tagliatelle with the sauce full of flavor - sundried tomatoes, nuts and the olive oil. Italian food is not only delicious but it also gives a lot of fun when family and friends accompany you while cooking.




Ingredients (serves 3-4):


Dough:

1 cup semolina flour
2/3 cup warm water
2 tbsp ground flaxseed + 6 tbsp hot water
1-2 tbsp olive oil
2 tsp powdered parsley leaves
salt


Pesto:

5 sun-dried tomatoes in olive oil
handful of rocket
handful of basil
2 tbsp cashew nuts
4 tbsp olive oil
salt
black pepper



Instructions:

Combine flaxseed with water. Sift the flour into a large mixing bowl. Add salt, flaxseed meal, powdered parsley and water. Knead the dough. If necessary, add some more flour. At the end, add the olive oil. Leave the dough in the fridge for about 20 minutes.

Prepare the pesto. Ground the nuts in a a spice grinder and put into the blender. Add tomatoes, basil, rocket and olive oil. Blend well. Season with salt and pepper.

Roll the dough as thin as possible and cut into 1 cm wide ribbons. Put pasta to the boiling and salted water. Cook for about 2-3 minutes while tossing. Then drain pasta and mix it with pesto. Enjoy!
