People who suffer from allergies do not have an easy like. Gluten can be found in many products. However it is possible to prepare delicious and nutritious plant based food without gluten. Here’s the recipe for quick and easy lunch with lots of colorful veggies - perfect for everyone!
Ingredients (serves 2-3):
180g sweet potatoes
220 g carrot
280 g potatoes
1 spring onion
about 220 g broccoli
1/2 red bell pepper
4 tbsp canned/fresh corn
2 tsp potato mix seasoning
salt and pepper
2 tbsp olive oil
Instructions:
Peel sweet potatoes, potatoes, carrots and onion. Slice the potatoes. Slice the carrot into the ribbons using the vegetable peeler. Chop the onion. Divide broccoli into small florets. Cut the bell pepper into sticks.
Heat the olive oil on a frying pan and add carrots and potatoes. Fry for about 4-5 minutes, stirring occasionally.
Add sweet potatoes and fry for another 3-4 minutes while tossing. Add the onion, bell pepper and broccoli and fry until the potatoes are soft. Then add the corn. Add the potato mix seasoning, some salt and pepper. Enjoy!
