Breakfast should provide you with the energy for the entire day. We love the combination of nutritious food with sweet plant based food. That’s why we’ve made these banana pancakes. Sweet, nutritious and loved by the kids and adults ,as well;)
Ingredients ( makes 6-8 pancakes):
1 cup plant based milk
1 and 1/3 cup whole grain spelt flour
2 tsp baking powder
1 tsp baking soda
1 banana
1 tsp cinnamon
4 tbsp ground flaxseed + 12 tbsp hot water
2 tbsp maple syrup
pinch of salt
2 tbsp vegetable oil
Instructions:
In a mixing bowl, combine the flaxseed meal and water with maple syrup. Mix all the ingredients well. Add milk, cinnamon, vegetable oil and squashed banana. Mix well.
Then add a pinch of salt and sifted dry ingredients (flour, baking powder and soda). Mix well.
Pour some batter on a hot pan and fry the pancakes both sides. Serve with favorite toppings. Enjoy!
