TOMATO SOUP WITH CHICKPEA AND NOODLES


Everybody knows tomato soup. Served at homes and school canteens. Here’s the recipe for plant based tomato soup with lots of protein coming from veggies. Let’s begin another week!




Ingredients (serves 4):

1l -1.5l vegetable stock
400g canned tomatoes
400g canned chickpea
2 tbsp tomato puree
1 tsp sugar
1.5 tsp Herbes de Provence
salt
black pepper
200 g mie noodles
fresh parsley



Instructions:

Put tomatoes and chickpea to the boiling stock and cook for about 10 minutes. Then add tomato puree, sugar and spices. Cover and cook over low heat for about 5-10 minutes.

Meanwhile, prepare the noodles - cook for about 5 minutes. Put some noodles in a bowl and pour the soup over it. Sprinkle with chopped parsley leaves. Enjoy!
