ROASTED RED PEPPER “ALMOST HUMMUS”


When another active weekend has ended and you have no idea what to make for breakfast, try our unconventional chickpea hummus.  Almost hummus because it’s more delicate, made with roasted pepper. Perfect for morning bread or rice waffles. Plant based protein that provides you with the energy for the day!




Ingredients:

1 tin of chickpeas (400g)
1 red bell pepper
1 tbsp tahini paste
salt
black pepper
1 tbsp lemon juice
2 tbsp olive oil
1/2 tsp sweet pepper
fresh parsley



Instructions:

Cut the peppers into halves and remove the seeds. Preheat the oven t 200 degrees C. Smear the pepper with some olive oil. Season with some salt and pepper. 

 Roast the pepper for about 30 minutes. Peel the peppers and cut them into smaller parts. Put it into a bowl. Add drained chickpea, olive oil, tahini paste, lemon juice and spices. 

Blend all ingredients until you get a smooth mixture. Then add chopped parsley and mix. Put the pace into a small jar. Store in the fridge. Enjoy!
