Tofu is not bad! Yes, we will not stop trying to convince you to tofu. Here’s another recipe for tofu dessert. Raspberry tofu cheesecake served cold. If you’re still looking for a perfect dessert for lunch, here it is;)
Ingredients:
Crust:
200 g coconut shreds
½ cup dates
5 tbsp walnuts
1 tbsp of coconut oil
2 tsp cacao powder
1 tbsp plant based milk
Filling:
360 g natural tofu
6 tbsp cooked millet
400 ml coconut milk
2-3 tsp agar-agar powder
1.5 cup raspberries (frozen or fresh)
juice of 1 lemon
a few drops of vanilla extract
1/2 cup brown sugar
Instructions:
Grind the walnuts, coconut shreds and dates and the put into the bowl. Add cacao powder, milk and melted coconut oil and mix the mixture. Press the nut mixture into a loose bottom cake pan. Put it into in the fridge.
In a pot, bring the coconut milk to boil. Add the raspberries (slightly melted) and cook over low heat for a while. Take the pot off the heat and blend the raspberries with milk. Then put the pot over the heat again, add agar agar powder and mix. Cook for about 2-3 minutes while tossing.
Crumble tofu into a large mixing bowl. Add the millet, milk with raspberries and blend. Add sugar, lemon juice, vanilla extract and mix until you get smooth mixture. Pour the mixture on the nuts and coconut base.
Leave to cool. Leave the cake in the fridge for a couple of hours (preferably over night).
