Easter time has come to an end but we still feel like having something sweet for breakfast - plant based sweet omelet! Impossible? Check it out!
Ingredients (serves 1):
about 1 cup liquid from canned (cooked) chickpeas
6 tbsp wheat flour/ spelt flour
2 tbsp coconut flour
a few drops of vanilla extract
Instructions:
Beat chickpea liquid with an electric whisk or a stand mixer until you get stiff peaks. At the end add a few drops of vanilla extract.
Slowly add sifted wheat flour/spelt flour and coconut flour to aquafaba and mix with a spoon (at this point aquafaba will gradually fall down - but don’t worry).
Heat some olive oil in a frying pan. Pour the batter onto the pan, cover (!) and fry over low heat for a few minutes (until the omelet turns golden). Take off the lid and gently flip the omelet to the other side. Fry for a few minutes.
Serve with favorite toppings (e.g. banana and peanut butter). Enjoy!
