We would never believe that after turning thirty there would be a time for one of us to give up on gluten:( Luckily the other sister comes to the rescue with gluten free, sugar free plant based apple tart! Perfect for dessert lovers and people suffering from gluten intolerance!
Ingredients:
Crust:
150g almond flour
150g coconut flour
80-90 ml water
2 tbsp vegetable oil
3 tbsp xylitol
Filling:
2 apples
200ml water
4 tbsp agave syrup
a few drops of vanilla extract
1 tsp lemon liquor (optional)
juice of 1 lemon
grated rind of 1 lemon
2 tsp cinnamon
Instructions:
Combine all ingredients for the crust in a bowl. If the dough is too dry, add more water. Preheat the oven t 180 degrees C. Spread the dough onto the tart pan coated in some oil. Use a fork to make small holes in the dough. Bake for about 20-25 minutes.
Peel and dice the apples. Preheat the pot/ deep frying pan, add apples, agave syrup and cook over low heat for a few minutes. Add water, vanilla extract, lemon juice and rind, cinnamon and mix. Cook over low heat until the apples are soft. Add liquor and mix again. Cook for another 2 minutes. Take 2-3 tablespoons of apple mixture into a small bowl and blend the rest of the apple mixture. Pour the blended mixture onto the crust. On top put the unblended apples. Sprinkle the tart with some almond flakes.
Leave in the fridge for a few hours to cool. Enjoy!
