Dear Mums. Although we’ve been busy recently we haven’t forgotten about the recipes for you. Light, plant based meal for breastfeeding and future mums. Good news also for the gluten sensitive people - this recipe is gluten free!
Ingredients (serves 2-3):
200 g red lentil pasta
1 spring onion
1 zucchini
2 tbsp olive oil
300 ml tomato puree
1 bay leaf
a few black pepper grains
salt
1 tsp sugar
1/2 tsp dried basil
fresh parsley
Instructions:
Place tomato puree in a pot. Season with some salt, add sugar, bay leaf and pepper grains. Cook over low heat for about 8-10 minutes.
Peel the onion and cut into halves. Cut zucchini into half slices. Heat the olive oil on a frying pan. Add the onion and zucchini and fry for about 4 minutes while tossing. Season with some salt and pepper and mix everything. Take the bay leaf and pepper grains out of the sauce. Then pour the sauce over zucchini and onion.
Cover and cook over low heat for about 3-4 minutes. Put the pasta to the boiling and salted water and cook for about 5-7 minutes. Drain pasta, put it on the plate and cover with the sauce. Enjoy!
