OAT PANCAKES


Sweet but healthy breakfast? It’s possible in vegan kitchen. Oat pancakes with some spelt flour. Delicate but nutritious. The perfect way to start the day. And it’s all sugar free!




Ingredients (6 pancakes):

1 cup oat flour
3 tbsp spelt flour
2 tablespoons ground flaxseed + 6 tablespoons hot water
1 cup plant based milk
1-2 tbsp agave syrup/maple syrup
a few drops of vanilla extract/ the seeds out of vanilla pod
pinch of salt
1 tsp baking powder
1 tbsp olive oil



Instructions:

In a small bowl, add the flaxseed meal and water. Stir to combine. Put flaxseed mixture into a mixing bowl, add vanilla extract, a pinch of salt and mix. 

Add agave syrup and vegetable oil and mix again. Slowly add milk. Sift the measured flours and add to the batter. Add baking powder and mix well. 

Heat the frying pan, smear it with some vegetable oil and pour some batter. Fry on both sides. Serve with favorite toppings (coconut milk, soy yoghurt, fruit, nuts, etc.). Enjoy!
