It’s going to be a really active week. So let’s provide ourselves with some good plant based protein. We’re going to use chickpea in the next few days, so if you want to follow our recipes you need to buy some.Here’s the recipe for a special breakfast or lunch for work: nutritious and providing lots of energy! Preheat your ovens, we’re going to make chickpea cupcakes!
Ingredients (4 cupcakes):
8 tbsp chickpea flour
2 tbsp ground flaxseed meal
1/2 avocado
1 tbsp yeast flakes
½ cup water
1/2 chili pepper
a piece of red bell pepper
fresh parsley
chives
2 tsp baking powder
pinch of baking soda
2 tsp curry powder
1 tsp turmeric (curcuma)
salt
black pepper
Instructions:
Cut avocado and bell pepper into smaller parts. Chop chili pepper, fresh parsley and chives finely.
In a bowl combine flour with flaxseed meal, yeast flakes and spices. Add baking powder and soda. Slowly add water and stir to combine. Then, add the veggies, parsley and chives. Mix well. Preheat the oven to 180 degrees C. Place muffin cups in the muffin pan.
Fill the cups with the batter - fill each cup 2/3 full. Bake for about 45 minutes - 1 hour. Leave on a wire rack to cool. Enjoy!
