We love breakfasts. And we cannot imagine starting the day without a good portion of energy coming from plants. Here’s something for the fans of omelettes. Combination of chickpea and healthy fat - avocado. Delicious and nutritious breakfast. Check it out and you’ll see that you will not need another cup of coffee to start the day.
Ingredients (serves 1):
6 tbsp chickpea flour
2 tbsp ground flaxseed meal
1 tbsp yeast flakes
2 tsp baking powder
pinch of baking soda
2/3 cup water
chives
fresh parsley
2 tsp curry powder
1 tsp turmeric (curcuma)
1/2 chili pepper
salt
black pepper
a piece of avocado
oil for frying
Instructions:
Combine all dry ingredients in a bowl (flour, flaxseed meal, yeast flakes, baking powder, soda and spices). Slowly add water and mix well.
Chop the chives, parsley and chili pepper finely and add it to batter. Mix well. Slice the avocado. Add some oil on a frying pan and heat it. Pour the batter on the pan.
Put slices of avocado on top of it.
Fry for about 3-4 minutes on medium heat. Then cover the pan and fry for about 2 minutes. Take off the lid and gently flip the omelette to the other side.
Fry for a while until the omelet turns golden brown. Serve with fresh veggies. Enjoy!
