Let’s be honest - buckwheat has an intense taste. Not everybody likes it. But we need to fight our childhood traumas and compulsions. If you combine the ingredients well, add some natural colorants, you may be surprised with the results. Try our colored buckwheat pancakes. Let’s make buckwheat taste good!
Ingredients (for 8 pancakes)
½ cup buckwheat flour
1 cup wheat flour
1 and 1/3 cup plant based milk
4 tbsp maple syrup
1 tsp cacao powder
1 tsp cinnamon
2 tsp baking powder
a few drops vanilla extract
1 tbsp pumpkin mousse (peeled, baked and blended pumpkin)
1 tbsp of coconut oil
Additionally:
parsley and beetroot powder to color the pancakes
Instructions:
In a large bowl, by using e.g. standing mixer, combine pumpkin mousse with vanilla extract, coconut oil and maple syrup.
Add cacao powder and cinnamon and mix again.
Then, slowly add milk and keep mixing the batter. At the end, add sifted flours, baking powder and mix the batter with a spoon or by using the standing mixer at the lowest speed.
Fry on both sides. Enjoy!
*To color the pancakes, divide the batter into three portions. Add 1 tsp of beetroot powder to one, 1 tsp of parsley powder to the other. Mix the batter with the powders.
