Anywhere you are there are hearts, flowers, teddy bears. Valentine’s Day has started. And to make this day special, we’re going to prepare to our husbands and kids, special chocolate waffles with caramelized bananas and nuts. Maybe not in the shape of a heart but made with love;)
Ingredients (about 8 waffles):
20 g fresh yeast
1.5 cup plant based milk
2 tbsp cacao powder
1 cup grated pumpkin
½ cup vegetable oil
a few drops of vanilla extract
2 tbsp sugar
16 g vanilla sugar
1 tsp cinnamon
2 cups wheat flour
Additionally:
2 bananas
6 tbsp sugar
2 tbsp peanut butter
½ cup water
2 tbsp walnuts
Instructions:
Blend pumpkin with the oil. In a large bowl, combine yeast with warm milk and sugar. Mix well and leave for a few minutes. Then add blended pumpkin, vanilla sugar, vanilla extract and start mixing. Add cacao powder and cinnamon and mix again. Add sifted flour and mix with a use of spoon or standing mixer at the lowest speed. Then cover the batter and leave in warm place for at least 30-40 minutes.
Meanwhile, slice the banana. Heat the frying pan, add sugar and water and slowly mix until sugar starts to dissolve and begins to darken in color. Add almond butter and mix well. Add bananas and chopped walnuts. Mix well so that the caramel covers bananas and walnuts. Remove the pan from heat.
Spread the waffle iron with some oil and preheat it. Bake for 3-4 minutes, until golden brown. We used waffle iron of 1400 W. If your waffle irons’ power is less, the cooking time will be longer.
Serve the waffles with caramelized bananas and walnuts. Enjoy!
