Delicate tart, sweet pumpkin mousse and fresh figs - perfect beginning for another weekend. Here’s the sweet treat to all the pumpkin fans. So good that you’ll not be able to resist it.
Ingredients:
Dough:
1 cup wheat flour
120ml vegetable oil
2 tbsp ground flaxseed meal
0,5 cup sugar
1 tbsp cacao powder
2 tsp baking powder
6 tbsp water
Filling:
150g ground almonds
40g sugar
4 tbsp vegetable oil
pinch of cardamom
2 tbsp pumpkin mousse (peeled, baked and blended pumpkin)
1 tsp baking powder
a few drops of vanilla extract/ the seeds out of vanilla pod
Additionally:
6 figs cut into slices
Instructions:
Combine all the dough’s ingredients. Shape a ball out of the dough and leave it in the fridge for about 30 minutes.
Prepare the filling: Combine all the filling’s ingredients with the use of a mixer. The filling should not be too thick.
Preheat the oven to 180 degrees C. Transfer the dough to the tart pan , easing it into the pan without stretching it. Bake for about 10 minutes. After 10 minutes, take the pie out of the oven.
Pour the pumpkin and almond filling on top. Put the slices over the almond filling. Put some almond flakes on top of it. Bake the pie for 35-40. Leave to cool before serving!
