YEAST BUNS WITH PEANUT BUTTER AND CRUMBLE

We really love peanut butter. It can be used in dessert but also in any dish served for lunch or dinner. Unfortunately, most local pastry shops do not have anything to offer vegans. So we have no other choice but to make yeast buns with crumble ourselves. Yeast buns with peanut butter:) You’ll love it:)

Ingredients (for about 10 small buns):

400 g wheat flour
250 ml soy milk
15 g fresh yeast
1 tsp sugar
100ml vegetable oil
2 tbsp peanut butter (without salt and sugar)
2 tbsp date syrup

Crumble topping:

4 tbsp flour
4 tbsp brown sugar
2 tbsp vegetable oil (e.g. melted coconut oil)

Instructions:

Preheat the milk. In a large mixing bowl dissolve the yeast, sugar and 2 tablespoons of flour in warm milk. Mix and leave to prove.

Then add sifted flour, vegetable oil and mix. Add peanut butter and date syrup. Knead the dough until it’s smooth and firm, and is no longer sticky. Cover the dough and leave it in a warm place for about 2 hours (until it has doubled in size).

Crumble topping:

In a mixing bowl combine sifted flour, sugar and vegetable oil.

Shape pretzel out of the dough (first make loose rolls out of the dough and then shape them into pretzel). Lay the buns on a baking pan covered with baking sheet. Make a small hollow in each bun and put the crumble inside.

Preheat the oven to 180 degrees C. Bake the buns for about 20-25 minutes.
