VEGAN CANNELLONI WITH TOMATO SAUCE

Italian food in vegan version again. We simply love discovering Italian flavors in plant based diet. Here’s the recipe for cannelloni with tomato sauce and lots of fresh veggies, plant based protein and herbs. Perfect occasion to discover vegan diet at family lunch.




Ingredients (serves 4):

Stuffing:
1 onion
garlic fresh/ dried
1 tin red bean
1 red bell pepper
1 tin of chopped tomatoes
2 tbsp tomato puree
1/2 tsp sweet pepper
1/2 tsp dried basil
2 tsp dried oregano
1/2 tsp sugar
1/2 tsp chili pepper
salt
1-2 tbsp olive oil


Tomato sauce:
1 tin of chopped tomatoes
2 tsp tomato puree
salt
1/2 tsp sugar
1 tbsp olive oil
1/2 tsp chili pepper
1/2 tsp sweet pepper
pinch of cinnamon
1 tsp dried oregano
1 tsp dried basil


Additionally:

about 14-16 cannelloni tubes


Instructions:

First, prepare the stuffing. Peel the onion. Cut the onion and the bell pepper into cubes. Heat olive oil in the pot, add onion and garlic. Fry until the onion turns golden. Then add the bell pepper and fry for about 2 minutes while tossing. Add the red bean (drained) and the tomatoes. Mix, add tomato puree and spices and cook over low heat for about 5-8 minutes, while tossing. You can leave the stuffing to cool before adding it to cannelloni tubes.

Prepare the sauce. Put tomatoes and tomato puree into a pot. Cook under a lid on a medium heat for about 5 minutes. Then add the spices and olive oil. Mix well and cook for about 8 minutes.

Rub the heatproof dish with some oil. Add the stuffing to the tubes (use a spoon or some filling device). Lay the cannelloni tubes side by side.


Pour the tomato sauce onto the cannelloni. Preheat the oven to 190 degrees C. Bake for about 35 minutes. Serve with favorite salad. Enjoy!
