SWEET POTATO PANCAKES WITH APPLE


There’re some sweet potato left after making baked dumplings. If you’re left with some too, don’t worry. Here’s what you can make out of them for breakfast. Believe it or not, but sweet potatoes can be used in pancakes. Here’s the recipe for sweet potato pancakes with apples. After all, we need some energy and strength for the next winter days.

 

 

Ingredients (serves 6)



150 g sweet potato
1/3 cup vegetable oil
a few drops of vanilla extract/ the seeds out of vanilla pod
16 g vanilla sugar
2 tbsp almond flour (optional)
2 cups plant based milk
2,5 cups wheat flour
2 tsp baking powder
pinch of salt
pinch of baking soda (optional)
1 large apple
oil for frying



Instructions:

Peel the potatoes, cut them into cubes and cook in water until they’re soft. Then leave the potatoes to cool and smash with a fork or blend.
Put the sweet potatoes into the mixing bowl, add vanilla sugar, vanilla extract, oil and mix for a few minutes with a stand/hand mixer. Add salt and sifted flours, baking powder and baking soda and mix all the ingredients well. 
Peel the apple and cut it into cubes. Add the apple to the batter and mix. Smear the frying pan with some oil and heat it. 
Pour small portions of the batter on the frying pan and fry the pancakes on both sides. Enjoy!
