CREAMY WARMING RED LENTIL SOUP (gf)

Poland is covered in snow. Our kids are on their way for 2 weeks’ winter holidays. We have the time to regain our strength, relax and enjoy the silence at home. There’s also more time for cooking! Here’s the recipe for warming red lentil soup - plant based protein and energy from veggies in one.





Ingredients:

about 1.5- 2 l of vegetable broth
2 carrots
about 180g sweet potatoes
1 red bell pepper
400g tinned chopped tomatoes
1 cup dried red lentil
salt
black pepper
1 tsp sugar
1/2 tsp sweet pepper
1/2 tsp chili pepper
1 tsp curry powder
4 tbsp coconut milk
fresh parsley


Instructions:
Bring vegetable broth to boil. Peel and cut the carrots and potatoes into cubes. Cut the bell pepper into cubes. Add the veggies and red lentil to the broth and cook over low heat for about 20 minutes (until the veggies are soft). Then add the tomatoes and spices. 


Cover and cook over low heat for about 10 minutes. Then blend the soup well. Add more vegetable broth if the soup is too thick. 

Season with some salt and pepper and add coconut milk. Mix and serve the soup with fresh parsley. Enjoy!
