We love vegan cutlets. So we always look for new inspirations in the kitchen. Here’s the recipe for those of you who love the flavor of peanuts and search for the source of plant based protein. It’s also a perfect recipe for those of you who have some form of gluten intolerance.
Ingredients (for about 9 small cutlets):
400g canned chickpea
2 tbsp finely chopped fresh parsley
1 medium onion
2 cloves garlic
4 tbsp of sunflower seeds
3 tbsp peanut flour
salt
1 tbsp olive oil
1/3 tsp garam masala
Instructions:
Drain chickpea and put it into a blender. Add parsley leaves and sunflower seeds.
Dice the onion. Chop garlic finely.
Heat the vegetable oil on a frying pan. Fry the onion with garlic. When the onion turns golden add it to chickpea. Season it with some salt and add garam masala. Blend all the ingredients well.
Then add peanut flour and mix well. Leave for about 5 minutes,
Shape small round cutlets out of the cutlet mixture. Lay the cutlets on a baking pan covered with baking sheet.
Preheat the oven to 180 degrees C. Bake the cutlets for about 35-40 minutes.
Serve with fresh veggies.
