TOFU CUBES IN TOMATO SAUCE (gf)


Don’t get anyone convince you that when you’re vegan mum you would not be able to breastfeed your baby. Vegan mums can breastfeed and at the same time have a healthy and delicious diet. This is the recipe for a perfect nutritious meal which also vegan breastfeeding mums can have. GO VEGAN!



Ingredients (serves 2-3):

180g natural tofu
1 tbsp agave syrup
2 tbsp olive oil
handful of basil
salt
black pepper
250 g tomato puree
1 tsp sugar
fresh parsley
rice noodles


Instructions:
Cut tofu into cubes. Sprinkle it with olive oil, agave syrup and chopped basil. Season tofu with salt and pepper and mix well. Leave in the fridge for about 30 minutes.

Then heat the olive oil on a frying pan and add marinated tofu. Fry for about 4-5 minutes while tossing. Then add tomato puree, some sugar and season with salt (if necessary).

Cover and cook over low heat for about 6-8 minutes. Sprinkle with chopped parsley leaves. Put the noodles to the boiling and salted water and cook for about 3-4 minutes. Drain the noodles. 

Mix the noodles with tofu and sauce. Serve with favorite salad. Enjoy!
