What to prepare for your vegan guests for Christmas dinner? Here’s the recipe for baked marinated tofu with pears and apples served with red onion marmalade cooked in red wine. After all, it’s Christmas time;)
Ingredients:
360 g tofu
3 pears
2 apples
Marinade for tofu:
5 tbsp soy sauce
2 tbsp agave syrup
3 tbsp medium dry red wine
clove of garlic
6 cloves
4 tbsp olive oil
Cut tofu into slices about 1 cm thick.
Chop the garlic finely and place it in a bowl. Add olive oil, agave syrup and soy sauce. Stir to combine. Add wine and cloves. Mix all the ingredients.
Place tofu slices in a bowl/pot and cover with the marinade. Cover and leave in a fridge for minimum 7 hours.
Red onion marmalade:
1/2 kg red onion (about 4 onions)
100 ml medium dry red wine
salt
pinch of cinnamon
4 tbsp brown sugar
2 tbsp agave syrup
Cut the onion into slices 3-4 mm thick.
Put sugar on the frying pan and when it starts to melt, add agave syrup and mix. Wait until it is caramelized. Then add onion and season it with some salt. Mix everything and add a pinch of cinnamon. Cook over low heat for about 4-5 minutes. Add wine and cook until the onion absorbs the wine.
Place the tofu into the rectangle cake tin covered with baking paper. Cut the pears and apple into quarters and place in the cake tin together with tofu. Pour the marinade over tofu and fruit.
Preheat the oven to 180 degrees C. Bake for about 20 minutes.
Serve with red onion marmalade.
