Here’s something for the breastfeeding mums! Here’s something for the pregnant ladies. This recipe has become one of K.’s favorite recipes since she gave birth to her son. Scrambled tofu with green pesto - full of plant based protein and iron.
Ingredients (serves 2)
180g tofu
Pesto:
3 tbsp sunflower seeds
6 tbsp olive oil
handful of rocket
handful of parsley leaves/ basil
salt
black pepper
Instructions:
Ground the sunflower seeds in a spice grinder. Blend all pesto ingredients until you get a smooth paste. Crumble tofu on heated frying pan and fry for a while, while tossing. Add pesto and mix well. Fry for 1-2 min. Enjoy!
