RICE FLAKES WITH CARAMELIZED FRUIT (gf)

We love breakfasts and we often try to look for some new ideas for what to have in the morning. Here’s the recipe for everyone who love desserts and those who like having carbohydrates in the morning so as to have lots of energy during the day. Rice flakes with caramelized fruit.

Ingredients (serves 2):

1.5 cup rice flakes
1.5 cup plant based milk
1 peach
1 apple
fresh juice of 1/2 orange
1 tbsp sugar
1 tsp cinnamon
2 tbsp coconut shreds
2 tbsp blueberries
1 banana
1 tbsp nuts (pecan/ walnuts)

Instructions:

Peel the peach and apple, remove the seeds and cut into slices/half slices. Slice the banana. Add sugar to a small pot and heat it. When heated add 2 tbsp water and mix well. When the sugar starts turning brown, add the fruit, cinnamon and about 1/4 cup water. Cook the fruit over low heat for about 3-4 minutes, until the fruit is soft. Leave to cool. Bring the milk to a boil and add the rice flakes. Cook for about 3-4 minutes while tossing. Prepare two glasses. Put 1 tbsp blueberries on the bottom of each glass, then a few slices of banana. Put the flakes combined with milk on top of the fruit. Then put the caramelized veggies, banana again and sprinkle it with coconut shreds and chopped nuts. Enjoy!
