During the last few weeks M. found green tomatoes at local grocery shops. It became a great inspiration for cooking especially after a day spent at work or weekend with workshops. Here’s the recipe for a quick and easy lunch - combination of green juicy tomatoes with chickpea and onion.
Ingredients (serves 2)
2 large green tomatoes
1 onion
1 tin of chickpea
1/3 chili pepper
salt
black pepper
dried garlic
1 tbsp olive oil
1 tbsp chopped parsley leaves
Instructions:
Chop chili pepper finely. Dice the onion and cut tomatoes into quarters.
Heat the olive oil on a frying pan. Add onion and chili pepper. Fry the onion until golden. Add the tomatoes. Season with some salt and pepper. Add dried garlic. Fry for about 5 minutes while tossing.
When the tomatoes start falling apart, add chickpea.
Fry for another 2 minutes, add parsley leaves and cook over low heat for about 3 minutes, while stirring occasionally. Enjoy!
