CARROT SOUP WITH ORANGE AND COCONUT (gf)


Another week has begun. Lot’s of work to do, kids need our attention and there’s always some housework ... We need to energy and strength. How about a soup? Here’s the recipe dedicated to breastfeeding mums who need to be careful when it comes to food. Gluten free carrot soup with some orange and coconut milk. So delicious!




Ingredients (serves 4)

4-5 carrots
4 potatoes
1.5-2l of vegetable broth
1 tbsp coconut milk
fresh juice of 1/2 orange
2 tbsp olive oil
salt
black pepper
fresh parsley
4-6 tbsp roasted sunflower and/or pumpkin seeds


Instructions:

Peel and cut the potatoes and carrots into cubes. In a pot heat the olive oil and add the veggies. Fry for about 3-4 minutes while tossing. Then cover the veggies with about 1-1.5l of vegetable broth. Cover and cook over low heat until the veggies are soft. Then blend the soup well. If the soup is too thick add more vegetable broth. Add orange juice and 1 tbsp of coconut milk. Season with some salt and pepper and mix everything. Cook for a few more minutes. Serve the soup with chopped parsley leaves, roasted sunflower/pumpkin seeds.
