AUTUMN SALAD WITH POTATOES, BEETROTS AND WHITE BEANS (gf)


The autumn season has begun which means viruses are here - we need vitamins. Here’s the recipe for a salad full of vitamins and plant based energy. Prepare beetroots, potatoes and white beans.





Ingredients (serves 4):

3 potatoes
2 medium-size beetroots
1 red onion
2 sour pickles
1 tin of white beans
2 handfuls rocket
2 tbsp chopped dill

Dressing:

3 tbsp olive oil
2 tbsp lemon juice
1 tsp mustard
1 tsp agave syrup
salt
black pepper


Instructions:

Cook potatoes and beetroots over low heat until they’re soft. Do not peel the veggies before cooking.

Slice the onion. Cut sour pickles into cubes. When the potatoes and beetroots are cooked, peel them and cut into cubes. Place the veggies in a bowl. Then add chopped dill, beans and rocket. Mix everything.

Combine all the dressing ingredients in a small bowl. Pour the dressing on top of the salad. Enjoy!
