SWEET POTATO SOUP WITH ORANGE AND CHILI PEPPER (gf)


Orange veggies in potato soup. But this is going to be completely different potato soup than the traditional one we know from our childhood. The ingredients are different: basic ingredients - sweet potatoes combined with carrot, orange and chili pepper. Unusual flavor. Simply delicious.




Ingredients (serves 4):

2 sweet potatoes
1 carrot
about 2 l of vegetable broth
fresh juice of 1/2 orange
some orange rind (optional, use it if you want the soup to have deeper orange flavor)
1 onion
1/2 chili pepper
1-2 tbsp olive oil
salt
black pepper
coriander and roasted sunflower seeds


Instructions:


Cut the onion, sweet potato and carrot into cubes. Chop chili pepper finely. Heat olive oil in the pan and add onion and chili pepper. Fry the onion until it turns golden. Then add carrot and sweet potato and fry for a while with the rest of the veggies. Add vegetable broth cover and cook over low heat for about 15-20 minutes. When the veggies are soft blend the soup. If the soup is too thick add some water. Season the soup with some salt and pepper. Add orange juice and orange rind (optional), mix and cook over low heat for a few minutes. Serve with roasted sunflower seeds and fresh coriander. Enjoy!
