Autumn is here and flu season has begun. To improve our health we try to use more ginger, garlic and chili (if it’s even possible to use more;) ) in our food. Here’s the recipe for those of you who often lack time to prepare anything - quick, nutritious and spicy food. This is what we love most!
Ingredients (serves 2)
1/3 chili pepper
2cm ginger slice
1 large clove of garlic
90 g natural tofu
1 red bell pepper
2 carrots
2 potatoes
3 tbsp of finely chopped fresh parsley
2 tbsp of finely chopped chives
4 tbsp soy sauce
300 ml water
salt
black pepper
1 tbsp of coconut oil
Instructions:
Chop the chili pepper, ginger and garlic finely. Cut the pepper into sticks, carrot into slices and potatoes and tofu into small cubes.
In a pan, preheat the oil, add ginger, garlic and chili pepper. Fry for about 1.5 minutes. Add tofu, carrot, pepper and potatoes. Season with some salt and pepper and fry for about 5 minutes. Add water and soy sauce.
Cook over low heat for about 15 minutes, until the veggies are soft. Add fresh parsley and chives
