Ingredients:
90 g tofu
1 tbsp red curry paste
1 tbsp olive oil
1 onion
1 red bell pepper
2 tbsp coconut shreds
1 large clove of garlic
2 tbsp coconut milk (solid layer)
Instructions:
Combine curry paste with olive oil. Chop the garlic finely. Slice the onion, cut the pepper into sticks and tofu into cubes.
Heat the olive oil and curry paste on a frying pan. Add onion and garlic and fry for a while while tossing (1 minute).
Add tofu, fry for about 1 minute
and then add the pepper. Mix, season with some salt and fry over low heat for about 3 minutes, while tossing. Add coconut shreds,
mix, add coconut milk and fry for another 2 minutes.
Serve with rice and fresh veggies.
